Asperges sauvages 00 (88)Asparagus acutifolius L., l'asperge sauvage, vient de renaître (Zone PACA).

  • "Plante ligneuse atteignant ou dépassant 1 mètre, buissonnante, à turions grêles (c'est ce qu'on mange) un peu amers ; tige et rameaux flexueux, cylindracés, striés, grisâtres, pubescents, rudes ; cladodes courts (3-6 mm. Les cladodes sont les piquants de la plante, ses feuilles), en alêne, raides, mucronés, piquants, persistants, fasciculés en étoile par 5-12 à l'aisselle d'une petite écaille prolongée en éperon court et piquant ; fleurs jaune-verdâtre, odorantes, dioïques, solitaires ou géminées, à pédoncules courts, articulés vers le milieu, les fructifères à article supérieur un peu plus épais ; anthères oblongues, mucronulées, 1-2 fois fois courtes que le filet ; baie noire, du volume d'un petit pois, à 1-2 graines. Lieux secs et arides de tout le Midi jusque dans la Drôme, l'Ardèche, l'Aveyron, le Lot ; Corse. Toute la région méditerranéenne". La cueillette ne peut bien se faire qu'à la main : pour ne pas colecter la partie ligneuse (vraiment inmangeable), il faut serrer la tige entre le pouce et l'index et remonter vers son extrémité. Conserver la même pression au cours de la montée. En atteignant la partie comestible, très peu ligneuse, la tige se casse d'elle-même.

Attention : l'asperge sauvage est très diurétique. Comme toujours, "le poison c'est la dose" : parfaite pour une cure dépurative de printemps, l'excès finit par irriter les reins.

Si elle est originaire de Méditerranée (ce qui reste à démontrer), les amérindiens avaient su reconnaître ses mérites :
